Fusion Cuisine.....
We do a lot of that type of cooking around our house. Our breakfast this morning was a great example of that and something we have regularly around here. We decided on Breakfast Tacos.
We started with three Eggland's Best eggs mixed with a splash of water, sea salt and black pepper.
Some yummy grated Cabot Extra Sharp Cheese...
Three slices of Hormel Natural Choice Smoked Ham and 1/2 of a fresh jalapeno, diced...
Corn tortillas sprayed with a little oil and sprinkled with sea salt....
Baked at 425˚, turning once, until they are as done as you like them.....
Saute΄ ham & jalapeno in a small amount of olive oil until ham is browned and jalapeno is soft......
Once the ham and jalapenos are ready, add the eggs and scramble until set. Sprinkle with cheese and fold in to melt.
My husband was in the mood for a Mexican flavor this morning so we made some beans to go along with the tacos. We took one can of pinto beans, drained and rinsed. Seasoned them with onion powder, garlic powder and a little Taco Bell Chipotle Taco Seasoning, added a little water and heated until hot.
As the beans heat up, stir and mash.....
Add a little grated cheddar cheese and stir in to melt......
Once the cheese is stirred in, we are ready to assemble the tacos. Since my husband had the taste for Mexican cuisine this morning, he laid down a layer of cheese on his tortillas and topped with beans......
Next he added some of the scrambled eggs....
Mmmmm........
In my husband's mind though, nothing is complete without a touch of his favorite spice.......
Now here is where our tastes differ. While my husband fused Mexican and Cajun together, I took a different route. I left off the beans and the cayenne in favor of the chopped herbs and a topping of sriracha. Mmm.....
And to kick up the nutritional value, my tacos are never complete without the addition of fresh spinach and chopped tomatoes.......
and somehow my Mexicalian Thai Tacos work. Deeeeeelish!
