My mom has been making this one for years and it's another of our favorite dishes. I can't let spring and summer go by without having this on the table quite often. So fresh....so healthy....so yummy! This is the recipe that my mom gave me with my changes....
2 (15 Oz) Cans Black Beans, Drained And Rinsed
*Eden Organic Beans do not contain BPA.
2 (16 Oz) Cans Shoe Peg Corn, Drained
* I like to use fresh corn cut from the cob
6 Tbsp Fresh Lime Juice
6 Tbsp Olive Oil
1 ½ Tsp Cumin
½ Cup Finely Chopped Onion
¼ Cup Chopped Cilantro
½ Tsp Salt
1 Cup Tomato, Chopped
*I use chopped grape tomatoes.
Chopped Jalapeno, Optional
*This is never optional for us.
Combine beans, corn, lime juice and salt in large mixing bowl. Mix well. Cover and refrigerate overnight. Add chopped tomato just before serving. You may want to add a little more lime juice and chopped jalapeno. Serve with tortilla chips.
