Roasted Sweet Potato Salad



I've told you about these once before here; but it bears repeating...

This roasted potato salad is ridiculously good.

The smoked paprika, roasted cumin, a dusting of coarse sea salt and additional cloves of minced garlic made this extra special.   Lightly spraying the potatoes with olive oil spray instead of coating the potatoes in oil made it a little lighter in calories.  And you can't go wrong with throwing in extra cilantro, right?  I literally crave this stuff particularly when Winter just won't seem to go away.  It's a beautiful taste of summer, in my opinion.

The posting may have become sporadic, at best, around here; but the cooking of good food and the photographing of it all has not stopped.  The posts are just piling up in the event that life slows down enough for me to finish the posts and actually publish them.

  8. Smoked paprika is one of my favorite spices. It can make anything taste like it's been smoked over a fire! I'm glad you're still finding time to cook and take photos, even if you don't have the time to post much. I hope things calm down for you soon...

I want so badly to be a "lighthouse" for those youth. A solid reminder that when they are out there lost at sea, they can look back and remember their way back home....
