PARRISH SAUSAGE POTATO STEW



My friend's daughter is at El Centro training with the Blue Angels. Last week a sweet lady brought an amazing lunch to them that she just had to write home about. Thankfully, she included the recipe and thankfully, my friend shared it with me. The word that I got was that this smelled absolutely amazing as it was cooking and tasted soooo good. We prepared it for dinner tonight and I have to say we were definitely not disappointed.  Not only did it smell unbelievably good and not only was it delicious, it was an easy meal to put together after work. You could even prepare it in a slow cooker if you wanted to have a nice hot meal waiting for you when you got home from work.   

I took some liberties with the original recipe that she sent to me so I will present it to you as we prepared it.  We started by slicing a pound of turkey kielbasa and a pound of Hot Italian Sausage and browning it in a large pot.


Remove the sausage from the pot and drain.  To the same pot, add a small amount of oil and 4 onions that have been sliced and separated into rings and a 10 oz. package of baby bella mushrooms that have been sliced.


 Sauté a few minutes, adding salt and pepper.  Add 3 cloves of minced garlic...


and 1 pound of fresh green beans, snapped.



Sauté until veggies begin softening.


Add a pound of new potatoes that have been washed and quartered...


...a 32 oz. container of Beef Broth...


 and 1 tablespoon of basil...


and the cooked sausage.  Cover and simmer until potatoes are done.


Parrish Sausage Potato Stew

1 lb. Turkey Kielbasa or Smoked Sausage of choice
1 lb. Italian Sausage, hot or sweet
4 Onion, sliced and separated into rings
10 oz. fresh baby bella mushrooms, sliced
3 cloves garlic, minced
1 lb. fresh green beans, snapped into pieces
1 lb. new potatoes or red potatoes, unpeeled and quartered
32 oz. beef broth
1 tablespoon of dried basil
Salt and Pepper, to taste

Slice and brown sausage in a large pot or Dutch Oven.  Remove from pan and set aside to drain.  Add a small amount of oil and onion rings and sliced mushrooms.   Add salt and pepper.  Add garlic and green beans.  Sauté for a few minutes to soften.  Add potatoes, broth, basil and the cooked sausage.  Cover and simmer until the potatoes are done.

This stew will make a regular appearance on our dinner table.

  12. This is such a hearty and healthy meal. Love all the veggies. We eat little meat but I can see this, cutting back a little on the sausage, which I love and bulking up the veggies. Thanks for this.
