BANANA MUFFINS

My friend, Mary, over at Life in a Small Town hooked me up once again with another wonderful recipe.  This time it was a recipe for banana muffins that she got from Cat Can Cook. This recipe was perfect for some of the "reduced for quick sale" bananas that I was able to find last week. 

I'm so glad that she shared this recipe with me as I was able to score some more of reduced for quick sale bananas last night.  That should keep me in Green Monsters and David in the Banana Muffins for a few days.    Let me share this wonderful recipe with you along with my changes.  I never can leave well enough alone and just make it like the recipe says to do it.  What fun is that, right?


I took three very ripe bananas....


And sliced them up just like they taught me at Dairy Queen when I was in high school....

  And gave them a good mash....



Cat said on her site that the original recipe called for a cup of sugar.  Since she doesn't like them too sweet, she only uses 1/2 cup of sugar.  Mary said that she had made them both ways but she liked them better when she used the whole cup of sugar.  I decided to change it up and make it my own by adding 1/2 cup of white sugar....
 

And 1/2 cup of brown sugar...


The recipe calls for 1/3 cup melted butter or margarine.  We only use real butter around here...



One slightly beaten egg....




In a separate bowl, mix 1 1/2 cups flour.  I used all purpose flour here but next time, I think I'm going to use 3/4 cup all purpose flour and 3/4 cup wheat flour and see how that works...


To the flour, add 1/2 teaspoon of salt....


And 1 teaspoon of baking soda.... 


The recipe calls for 1 teaspoon of baking powder.  I don't remember using the last of the baking powder; however, in the middle of preparing these muffins, I was unable to locate it.  I discovered by doing a search online that you can substitute 1/4 teaspoon of baking soda and 1/2 teaspoon of Cream of Tartar for the baking powder.   I did that and it worked fine.  I'm going to keep that little piece of information around and I may never buy baking powder again.  You have to be careful to get the kind without aluminum anyway.  Who says you can't Google everything?! 




Add the dry ingredients to the wet ingredients and mix well....



Bake at 350 degrees for 20-25 minutes.  My little toaster oven seems to take 25 minutes pretty consistently to bake the muffins.  





These muffins were soooo good and I'm not a huge banana muffin fan.   If you are a fan, you should definitely give these a try.  Cat mentioned on her site adding nuts and/or chocolate chips.  That would make these even better.....if that's possible.

Banana Muffins (makes 12 muffins)
Adapted from a recipe from: Cat Can Cook

3 or 4 Large bananas, mashed
1/2 cup white sugar 
1/2 cup brown sugar
1 slightly beaten egg
1/3 cup melted margarine or butter
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 1/2 cups flour

Mix the mashed banana, sugar, egg and margarine together. Set aside. In a separate bowl, mix together baking soda, baking powder, salt and flour. Mix wet and dry ingredients all together.  Pour into greased or lined muffin tins.  Bake at 350 degrees F oven for 20-25 minutes.

  3. Thanks Candace! These look like an awesome and easy way to use up over ripe bananas! I'm going to add the missing ingredients to my grocery list and make them super soon! I wonder how well it would work in a pyrex loaf pan? I def don't own muffin pans! Yikes!

    For sure hunt down a kabocha squash if you like squash/pumpkin -- it's my new favorite! So yummy and savory... it makes the best non-fried french fry I have ever eaten!
